Hello everyone. Before we jump back into wedding and party season which seems to start earlier each year we’re at the brilliant @wadhurstfarmersmarket tomorrow morning 9 till 12.30. So set the alarm to come and get something for your morning coffee or weekend treat. This week we’ve got luscious vegan chocolate cake, gluten-free almond and clementine cake, baked New York cheesecake, all the brownies, slow-baked nutty granola, quiches galore and tahini white chocolate blondies. What a fun night at @dylanmilescars to help with their launch night. So many awesome people to celebrate the opening of such a great addition to Tunbridge Wells life. We worked with the lovely Matteo @lagodicomo_tunbridgewells whose team provided food that brought joy all round. The bar was on fire as Dylan wanted to christen the new enterprise with a very warm welcome to everyone. Thanks to my brilliant team.

Dietary requirements: I could literally write a book about this - a long, truthful account of strange requests, preferences and ‘intolerances’. I’m sure I’m with most caterers in that we all desperately want to take care of anyone who suffers allergies or reactions to certain food types or ingredients - it’s not easy for them and they really need to trust their host/caterer. We genuinely want them to have a lovely time and eat well. However, the growing number of ‘preferences’ demands a lot more labour, paperwork and time to get right. We do this with pleasure but find it disheartening when a guest is suddenly ‘flexi’ on the day and wants the menu prepared for everyone else. Having said that we’re enjoying adding more and more vegan items to our menus and are on occasion offering the vegan version as the main version - hello yummy vegan spinach strudels, pea felafel, carrot cake and brownies - who can tell the difference?!

Back out there! How we love a canapé - mini anything and layers of flavour to make your taste buds pop. Our canapés are lovingly assembled as your guests arrive. Good canapés don’t arrive in boxes six hours before your guests. We love to pfaff around so you don’t have to, final touches, garnishes and then straight out.

So is that really it? The end of summer lunches in the garden? Today’s brief was to do something simple and unfussy for a group of friends marking the passing of a loved one. We have been happily busy again since restrictions were eased but it’s these occasions especially that always make me realise how precious our time is with true friends and family and how necessary it is to close the circle with a special gathering.

These gorgeous flowers are brightening up my weekend. They are also what we often use for events for a beautiful burst of colour and scent for the tables. Everybody loves fresh flowers and to be able to source from @bewlrookery is a real bonus for me. It’s getting easier to source fantastic local flowers, as well as locally produced food and the more we support these small and skilled businesses and growers, the better it will be for all of us.

What is better on a Saturday morning than crispy, flaky, cheesy straws? So therapeutic to make lines and lines and lines of them ....
If you buy the puff pastry they’re also super easy to make. Just glaze half a sheet of puff with egg then top with anything you fancy - grated Parmesan, gruyere, cheddar, mustard, chilli, marmite, sun dried tomato paste, tapenade, fresh or dried herbs - anything you like. Fold over the other half of pastry then gently roll to compress. Glaze the top adding poppy seeds or more cheese then chill for ten minutes so when you cut into strips you’re able to get crisp, clean lines. All you do now is hold each end of a strip then twist away. Press each end into a baking sheet to stop them hopping around in the oven and bake until golden.
